INSIDE SUJEO, TORY MILLER’S NEW PAN-ASIAN NOODLE BAR

Just a couple short weeks ago, James Beard Award-winning Madison, Wisconsin chef Tory Miller of L’Etoile and Graze opened his third restaurant: Sujeo. One of the most anticipated openings of the seasonand one of Madison’s biggest openings this year, Sujeo is a pan-Asian restaurant and noodle bar located on the ground floor of the Constellation in  Madison, Wiscosin a new high rise development.

The menu is expansive, and fuses local Midwestern ingredients and techniques with flavors and dishes from across Asia. There’s hot pot, curries, tonkatsu, daily changing ssams, and a whole lot more. The noodle bar, which is open late, serves a similarly diverse array including ramen, pho, khao soi, japchae, plus non-noodle dishes like banh mi. Korean broasted chicken and house-made frozen custard are both nods to the Midwest. A dim sum brunch has also been promised.  Go, take a look around at SUJEO:
